Ingredients
~ 1 cup lentils
~ 4 Bratwurst (do NOT substitute with franks; the higher quality the better)
~ 2 garlic cloves
~ "Zest and Juice of 1 Lemon" (for simplicity: 2-4 tablespoons lemon juice)
~ Plenty of kosher salt
~ A Vegetable (cauliflower, shredded spinach [what I used], broccoli)
Épices (du Mojo): 1/3 cup Olive Oil, generous Rosemary, 1/4 teaspoon red pepper flakes (can substitute with 1/8
teaspoon of cayenne, paprika, and chile powder each)
Recipe
- Cook lentils in simmering salted water (in a saucepan/pot), 20-25 minutes, then drain (do other steps as this
is happening)
- Place generous rosemary, garlic, and pepper in a bowl
- Heat 1/3 cup olive oil in a skillet until shimmering,
AKA incredibly hot [tip: if oil starts smoking it's good], and pour over aromatics in bowl, letting sit
for 10 minutes before stirring in the lemon zest/juice and some salt (this is the mojo).
- Heat 2 tbsp olive oil in skillet, and cook Bratwursts until deeply browned and releasing some fat, about 7-9
minutes. Transfer to a plate.
- Cook the lentils in the skillet on high heat for about 5+ minutes until crispy as desired
- Put lentils in the pot, add vegetable to the mojo, and add to lentils. Add more salt and oil to taste.
- Serve: Divide lentils amongst plates, and then put bratwurst on top.
